You Have to Try This Soup!

Y’all, this soup is dangerously good! Packed with flavor, it’s the perfect recipe as we transition into fall. There’s something about this soup that warms my soul and feels so healing.

I made a huge pot of this a couple of weeks ago, and it barely lasted 30 minutes before my boyfriend and I devoured the entire thing! I actually ended up making it twice in one week because we couldn’t get enough. The best thing about this soup is how versatile it is. Below are a couple of ways I enjoyed it:

  • By itself (so good!)
  • With club crackers
  • Over steamed rice
  • With rice noodles
  • Topped with hoisin sauce, sriracha, and or chili oil

 

Oh, Did I Forget to Mention It's Incredibly Easy to Make?

1. WHAT YOU NEED

Frozen dumplings, shrimp, Little Sheep Hot Pot Soup Base Plain, king oyster mushrooms, carrots, bok choy, napa cabbage, bell pepper ( red, green, yellow, and orange), onion, garlic, ginger paste, Dash’s garlic and herb seasoning, olive oil, and chili crunch oil (optional)

2. GETTING STARTED

 Start by sauteing your aromatics in a table spoon of olive oil (bell peppers, garlic, onion, and ginger paste). The goal is to let the flavors blend long enough to fill the house with an aromatic heaven—about 5 to 7 minutes.

3. PROTEIN

Next, cook up your shrimp. Combining the shrimp with the aromatics creates an incredible flavor.

4. WHERE THE MAGIC HAPPENS

This soup base is ADDICTING. If you don’t want to turn into a feral animal over it, you might want to try another brand. All jokes aside, this stuff is seriously delicious!

5. DECIDED TO TREAT MYSELF TO DUMPLING DELICIOUS

I don’t remember exactly which brand of dumplings I used, but I’m sure homemade dumplings would take this soup to the next level!

6. IT'S VEGGIE TIME

I’ve always been a veggie girl, and I love loading my soups with tons of vegetables. My current favorites are bok choy and carrots.

7. I THINK I'M IN LOVE

The soup base is already packed with flavor, but I love adding a little extra razzle-dazzle. This seasoning does the trick for me every single time!

8. TIME TO DIG IN!

The final (and best) step is to eat. If you want a little kick, try adding some of Momofuku's chili crunch oil (so good!). I said this soup is the perfect comfort food for fall, and I meant it! There’s something about it that makes you feel warm, cozy, and ready to welcome the crisp days of the season. So, grab a bowl, settle in, and let this soup be your warm welcome to fall!

 

Cook Time: 30 minutes

- Frozen dumplings

- Red, green, yellow, and orange bell pepper
- Onion and garlic
- Ginger paste
- Dash’s garlic and herb seasoning (optional)
- Chili crunch oil (optional)
