Cheesy Corn Dip
Ingredients:
- 1 can corn, drained
- ¼ cup jalapeños, sliced
- ¼ red onion, chopped
- 4 oz cream cheese, softened
- 2 tbsp @hellmannsmayonnaise
- 2 tbsp sour cream
- 2 tbsp heavy whipping cream (optional, for extra creaminess)
- 1 tsp each: paprika, cumin, chili powder, black pepper, and onion powder
- Shredded cheese (use as much as you like—cheddar, pepper jack, or Colby jack work great!)
Instructions:
1️⃣ Roast the Corn – In a dry skillet over medium-high heat, add the drained corn and let it roast, stirring occasionally, until it gets golden brown with some charred edges (about 5-7 minutes).
2️⃣ Sauté the Veggies – Add the chopped red onion and jalapeños to the pan with the corn. Cook for another 2-3 minutes, until the onions soften and everything smells amazing.
3️⃣ Melt & Mix – Reduce heat to low and stir in the cream cheese until it melts and coats the veggies.
4️⃣ Bring the Flavor – Add in the mayo, sour cream, and heavy whipping cream (if using), along with all the seasonings. Mix everything until well combined.
5️⃣ Get Cheesy – Stir in your desired amount of shredded cheese, letting it melt into the dip until it’s smooth and creamy.
6️⃣ Bake (Optional for Extra Goodness) – If you want a bubbly, golden top, transfer the dip to an oven-safe dish, sprinkle extra cheese on top, and bake at 375°F for 10 minutes or until melty and slightly golden.
7️⃣ Serve & Enjoy! – Serve hot with tortilla chips, crackers, or even as a topping for tacos.
