Cheesy Potatoes & Sausage
Ingredients
- 4-5 medium russet potatoes, cut into 1-inch chunks
- 1/2 teaspoon salt (or to taste)
- 1/2 teaspoon black pepper
- 1 teaspoon Dan-O’s seasoning
- 1/2 teaspoon red pepper flakes (plus more for topping)
- 1 teaspoon garlic powder
- 2 tablespoons olive oil, divided
- 1 package Eckrich sausage, sliced
- 1/2 green bell pepper, sliced
- 1/2 red bell pepper, sliced
- 1/2 sweet onion, sliced
- 8 oz Velveeta cheese, melted
Instructions
Step 1: Prepare & Cook the Potatoes
In a large bowl, toss the diced russet potatoes with salt, black pepper, Dan-O’s seasoning, red pepper flakes, garlic powder, and 1 tablespoon olive oil until evenly coated. Place the seasoned potatoes in an air fryer and cook at 400°F for 45 minutes, shaking occasionally, until crispy and golden brown.
Step 2: Cook the Sausage
While the potatoes are air frying, heat a drizzle of olive oil in a pan over medium-high heat. Add the sliced Eckrich sausage and cook until seared on both sides. Once browned, remove the sausage from the pan and set aside.
Step 3: Sauté the Peppers & Onions
In the same pan with the remaining sausage drippings, add the green bell pepper, red bell pepper, and sweet onion. Sauté over medium heat until softened and slightly caramelized.
Step 4: Combine Everything
Once the potatoes are crispy, remove them from the air fryer and transfer them to the pan with the peppers and sausage. Mix everything together until well combined.
Step 5: Add the Cheese (Optional but highly recommended!)
Melt Velveeta cheese and pour it over the potato and sausage mixture. Stir well to coat everything in the creamy cheese sauce.
Step 6: Serve & Enjoy
Top with an extra sprinkle of red pepper flakes, serve warm, and enjoy!
