Creamy Chicken White Sauce Pizza with Italian Herb & Cheese Crust

Ingredients

Dough (makes 4 medium pizzas)

2 cups warm water (105–110°F)

4½ tsp (2 packets) active dry yeast

4 tsp sugar

1/2 cup olive oil

2 tsp salt

5 cups all-purpose flour 

2 tsp Italian seasoning

2 tsp Tony’s Garlic & Herb (salt-free)

1 cup shredded Colby & Monterey Jack cheese (Sam’s Club blend)

White Sauce

3 tbsp butter

3 tbsp all-purpose flour

2 cups milk (add more as needed for consistency)

2 oz cream cheese

½ cup Sam's Club shredded mozzarella cheese

Salt & pepper, to taste

Toppings

2 cups Sam's Club shredded rotisserie chicken

1 cup caramelized onions

1 cup Sam's Club diced ham (pan-fried until golden)

2 cups Sam's Club shredded mozzarella cheese 


Directions

1. In a stand mixer bowl, combine 2 cups warm water, 4 tsp sugar, and 4½ tsp yeast. Let sit 5–10 minutes until foamy.

2. Add 1/2 cup olive oil and 2 tsp salt.

3. Add 4 cups flour, mix on low speed, then gradually add the last cup until the dough comes together.

4. Mix in Italian seasoning, Tony’s Garlic & Herb, and Colby & Monterey Jack cheese until evenly combined.

5. Knead on medium speed for 7–8 minutes (or 10 by hand) until smooth and elastic.

6. Lightly oil a large bowl, place dough inside, cover, and let rise 1–1½ hours, until doubled in size.

7. Punch down dough and divide into 4 equal portions. Form each into a 10–12-inch circle.

8. Cover the dough balls with a towel and let them rest for 15 minutes. This makes them easier to stretch and shape when baking.

9. Place on parchment-lined pans and prebake at 425°F for 7–8 minutes until lightly set. (This step keeps your pizza from turning out droopy!)


White Sauce

1. In a saucepan, melt 3 tbsp butter over medium heat.

2. Whisk in 3 tbsp flour and cook 1–2 minutes until lightly golden.

3. Slowly whisk in 2 cups milk, stirring until smooth and thickened.

4. Add 2 oz cream cheese and ½ cup shredded mozzarella. Stir until melted.

5. Season with salt and pepper to taste, then set aside.


Assemble the Pizza

1. Spread a thin layer of white sauce over each prebaked crust.

2. Add a layer of shredded mozzarella, followed by caramelized onions, chicken, and ham.

3. Spoon another light layer of white sauce over the toppings.

4. Finish with another layer of mozzarella.

5. Bake at 425°F for 12–15 minutes, or until cheese is bubbling and crust is golden.

6. Let cool for 5–10 minutes before slicing.


Storing Extra Dough

If you don’t plan to bake all 4 pizzas:

1. Refrigerate: Coat extra dough balls lightly in oil, wrap tightly in plastic wrap, and refrigerate for up to 3 days. Bring to room temperature before using.

2. Freeze: Wrap tightly in plastic wrap, then place in a freezer bag. Freeze for up to 3 months. Thaw in the fridge overnight, then let rest at room temp for 1 hour before rolling.


Tips

1. Prebaking is key to avoid a soggy or droopy center.

2. Don’t skip the garlic and herb seasoning in the dough! It gives that signature Subway-inspired flavor.
