Flakey Homemade Biscuits
Ingredients
1 3/4 cups all-purpose flour
2 1/2 teaspoons baking powder
1 teaspoon salt
6 tablespoons cold butter
3/4 cup milk
Instructions
Step 1: Combine dry ingredients
In a medium bowl, mix together the flour, baking powder, and salt.
Step 2: Cut in the butter
Add cold butter to the flour mixture. Use a fork, potato masher, or your hands to break the butter down into small pieces until the mixture resembles coarse crumbs. This step is key to getting those flaky layers.
Step 3: Add milk
Pour in the milk and stir just until the dough comes together. Try not to overmix—this helps keep the biscuits soft and flaky.
Step 4: Roll and fold the dough
Lightly flour your surface, then roll the dough out into a rectangle. Fold the dough over itself, then roll it out again. Repeat this folding and rolling process 3 to 4 times to help build those buttery layers.
Step 5: Cut out the biscuits
Once finished, roll the dough out to about 1/2 inch thick. Use a biscuit cutter or a cup to cut out your biscuits. This recipe should make 7–8 biscuits.
Step 6: Bake
Place the biscuits in a cast iron skillet or on a baking sheet. Bake at 450°F (232°C) for 10–14 minutes, or until the tops are golden brown.
Step 7: Finish with butter
Remove the biscuits from the oven and immediately brush the tops with melted butter. Serve warm.
