Homemade Buttermilk Biscuits

Ingredients:

- 2 cups (240 grams) all-purpose flour
- 1 tablespoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon kosher salt
- 6 tablespoons (85 grams) cold unsalted butter, lard, or shortening (cut into small pieces)
- 1 cup (237 ml) buttermilk

Instructions:

1. Preheat your oven to 450°F (230°C).
2. In a large mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, and kosher salt until well combined.
3. Add the cold, diced butter (or lard/shortening) to the dry ingredients. Use a pastry cutter, fork, potato masher or your fingers to cut the fat into the flour mixture until it resembles coarse crumbs. The mixture should have some pea-sized pieces of fat remaining.
4. Make a well in the center of the flour mixture and pour in the buttermilk. Using a fork, rice paddle or your hands, gently mix the buttermilk into the flour mixture until just combined. Be careful not to over mix; the dough should be shaggy.
5. Turn the dough out onto a lightly floured surface. Gently knead the dough a few times until it comes together. Do not knead too much, as you want to keep the dough tender.

6. Roll or pat the dough to a thickness of about 1/2 to 3/4 inch (1.3 to 2 cm). Use a round biscuit cutter or a cup to cut out biscuits. Press the cutter straight down without twisting to ensure the biscuits rise evenly. 7. Place the cut biscuits on a baking sheet lined with parchment paper or a baking dish covered in cooking spray, leaving a small gap between each biscuit. Bake in the preheated oven for about 10-12 minutes or until the biscuits are golden brown on top. 8. Once the biscuits are baked, remove them from the oven, baste with melted butter and let them cool slightly before serving.
