Instant Pot Beef Stew

 Ingredients:

  • 3 lbs beef rump roast, cut into chunks
  • 6 red potatoes, chopped into large pieces
  • 1 can of Red Gold stewed tomatoes
  • 1 tube of tomato paste
  • 1/4 red onion, chopped
  • 1/2 white onion, chopped
  • 5 boiler onions, whole
  • 1/2 green bell pepper, chopped
  • 1/2 red bell pepper, chopped
  • 1 small bag of baby carrots
  • 1 container of fresh mushrooms, sliced
  • 1/2 cup chopped celery
  • 2 tbsp browning and seasoning sauce
  • 1 tbsp onion powder
  • 1 tbsp garlic powder
  • 1 tbsp seasoned salt
  • 1 tsp black pepper
  • 1 tbsp garlic and herb seasoning
  • 3 cups beef broth

Instructions:

1. Cut the beef rump roast into bite-sized chunks. Season with some of the onion powder, garlic powder, seasoned salt, and black pepper. Set aside.

2. Turn your Instant Pot to "Sauté" mode. Add a bit of oil and let it heat up. 
   - Add the seasoned beef chunks to the Instant Pot and brown them on all sides, about 5 minutes. You can add the browning and seasoning sauce to help with the color and flavor.

3. Pour in 3 cups of beef broth. Cover and pressure cook for 30 minutes.

4. After 30 minutes, vent and remove the top. Add in all of the veggies.

5. Pour in stewed tomatoes and tomato paste. Stir well, cover, close vent and pressure cook for 30 more minutes.
      
6. Natural Release:
   - Once the cooking time is up, allow the Instant Pot to naturally release pressure for 10-15 minutes.

7. Open the Instant Pot, stir the stew, and taste for seasoning. Adjust if needed with additional salt, pepper, or garlic and herb seasoning.

8. Serve the beef stew with sweet cornbread or buttery crackers, and enjoy!
