Neisbae's Smothered Chicken

Ingredients:

- 6-8 bone-in chicken thighs
- 1 tablespoon onion powder
- 1 tablespoon garlic powder
- ½ teaspoon red pepper flakes (adjust to your spice preference)
- ½ tablespoon black pepper
- ½ tablespoon seasoned salt
- 2 tablespoons Worcestershire sauce
- 1 cup buttermilk
- 1 cup low or no-sodium chicken broth
- ½ cup heavy whipping cream
- ¼ cup all-purpose flour
- 2 tablespoons olive oil
- ½ green bell pepper, thinly sliced
- ½ red bell pepper, thinly sliced
- ½ yellow bell pepper, thinly sliced
- ½ large sweet onion, thinly sliced

Instructions:

1. In a large mixing bowl, combine the onion powder, garlic powder, red pepper flakes, black pepper, seasoned salt, Worcestershire sauce, and buttermilk. Stir well to create the marinade.
2. Place the bone-in chicken thighs in the marinade, making sure they are fully coated. Cover the bowl with plastic wrap or a lid and refrigerate overnight (or at least 4-6 hours) to marinate.
3. Preheat the oven to 375°F (190°C).
4. In a large oven-safe skillet or cast-iron pan, heat the olive oil over medium-high heat.
5. Remove the chicken thighs from the marinade, allowing any excess liquid to drip off, and lightly coat them in flour. Next, place them in the hot skillet. Sear the chicken thighs on both sides until they are golden brown. This should take about 3-4 minutes per side. Once seared, remove the chicken from the skillet and set it aside.

6. In the same skillet, add a little more olive oil if needed, and then add the sliced bell peppers and sweet onion. Sauté the vegetables until they are softened and slightly caramelized, about 5-6 minutes.
7. Sprinkle the flour over the vegetables in the skillet and stir well to combine. Cook for another 1-2 minutes to cook out the raw flour taste.
8. Slowly pour in the chicken broth while stirring continuously to create a smooth sauce.
9. Lower the heat to medium and add the heavy whipping cream to the sauce, stirring until well combined.

10. Return the seared chicken thighs to the skillet, nestling them into the sauce and vegetables.
11. Cover the skillet with a lid or aluminum foil and transfer it to the preheated oven.
12. Bake the smothered chicken in the oven for 30-35 minutes or until the chicken is fully cooked and tender.
13. Serve the smothered chicken over rice, mashed potatoes, or with your favorite side dishes, and spoon the delicious sauce and vegetables over the top.
