Rotisserie Chicken Jalapeño Poppers

Ingredients:

  • 2 cups shredded rotisserie chicken
  • 10-12 fresh jalapeños
  • 4 oz cream cheese, softened
  • 1 cup shredded cheese (cheddar, Colby jack, or pepper jack work great!)
  • 10-12 slices bacon (or turkey bacon for a pork-free option)

Instructions:

1️⃣ Shred the Chicken – Remove about 2 cups of meat from the rotisserie chicken and chop into small bite-sized pieces.

2️⃣ Make the Filling – In a bowl, combine the shredded chicken, softened cream cheese, and shredded cheese. Mix well until smooth. (If the cream cheese isn’t soft, microwave it for 10-20 seconds to make it easier to mix.)

3️⃣ Prep the Jalapeños – Slice each jalapeño down the middle, being careful not to cut all the way through. For less heat, remove the seeds and rinse them out.

4️⃣ Fill the Poppers – Stuff each jalapeño with the chicken and cheese mixture, making sure they are well-filled but not overflowing.

5️⃣ Wrap with Bacon – Tightly wrap each popper with a slice of bacon, securing with a toothpick if needed.

6️⃣ Air Fry Until Crispy – Preheat the air fryer to 350°F and cook for 10-15 minutes, or until the bacon is crispy and the jalapeños have softened.

7️⃣ Serve & Enjoy! – Pair with ranch, chipotle mayo, or your favorite dipping sauce for the ultimate game-day snack.
