Steak Nachos

Ingredients

  • 2 NY strip steaks
  • Salt and black pepper, to taste
  • 1/2 tablespoon oil (for searing)
  • 1/2 green bell pepper, sliced
  • 1/2 red bell pepper, sliced
  • 1/2 sweet onion, sliced
  • Tortilla chips (recipe here)
  • Queso (recipe here)
  • Guacamole
  • Pico de gallo
  • Sour cream
  • Jalepenos

Instructions

  1. Prepare the Steak

    • Season both sides of the NY strip steaks with salt and black pepper.
    • Heat a cast iron skillet over medium-high heat with a little oil.
    • Sear the steaks until they develop a nice crust
    • Remove from the skillet and let them rest for 5-10 minutes before chopping them into bite-sized pieces.
  2. Sauté the Peppers & Onions

    • In the same, add the sliced green and red bell peppers and sweet onion.
    • Sauté over medium heat until softened and slightly caramelized, about 5-7 minutes.
    • Remove from the pan and set aside.
  3. Assemble the Nachos

    • Arrange homemade tortilla chips on a large plate or sheet pan.
    • Drizzle with queso
    • Scatter the chopped steak and sautéed peppers and onions over the chips.
    • Top with guacamole, pico de gallo, sour cream, and jalepenos.
  4. Serve and Enjoy
