Prawn Jalfrezi
Ingredients
For the Shrimp Marinade:
- 1 lb shrimp, cleaned and deveined
- 1/2 tsp turmeric powder
- 1/2 tsp salt
- 1 tsp lemon juice
For the Curry:
- 1 large onion, finely chopped
- 2 medium tomatoes, chopped or blended
- 1 green bell pepper, cut into chunks
- 1/2 red bell pepper, cut into chunks
- 1/2 yellow bell pepper, cut into chunks
- 2 green chilies, sliced (adjust to your spice level)
- 3 garlic cloves, minced
- 1-inch piece of fresh ginger, minced
Spices:
- 1 tsp cumin seeds
- 1 tsp turmeric powder
- 1 tsp red chili powder
- 1 tsp coriander powder
- 1 tsp garam masala
- 1/2 tsp ground cumin
- 1/2 tsp fenugreek leaves (optional)
- Salt to taste
Other Ingredients:
- 2 tbsp oil (vegetable or mustard oil preferred)
- Fresh cilantro for garnish

Marinate the Shrimp
- In a bowl, combine the shrimp, turmeric powder, salt, and lemon juice. Toss well to coat. Let the shrimp marinate for 10-15 minutes while you prepare the other ingredients.

Cook the Vegetables
- Heat 1 tbsp of oil in a large pan over medium heat.
- Add the chopped onion and cook until golden brown, about 7-8 minutes.
- Stir in the garlic and ginger, cooking for 1-2 minutes until fragrant.

Add the Bell Peppers and Green Chilies
- Toss in the green, red, and yellow bell peppers, along with the green chilies. Stir-fry for 3-4 minutes until the peppers are slightly softened but still crisp.

Build the Curry Base
- Add the chopped or blended tomatoes and cook for 5-7 minutes, stirring occasionally, until the tomatoes break down and the oil begins to separate from the mixture.
- Stir in turmeric, red chili powder, coriander powder, ground cumin, and salt. Let the spices toast for 1-2 minutes to enhance their flavor.

Cook the Shrimp
- Add the marinated shrimp to the pan and stir well to coat them in the curry base. Cook for 4-5 minutes, stirring occasionally, until the shrimp are pink and cooked through.

Finish with Garam Masala
- Sprinkle in the garam masala and fenugreek leaves (if using). Mix well and cook for another 1 minute.

Garnish and Serve
- Turn off the heat and garnish with freshly chopped cilantro.
- Serve hot with steamed basmati rice or naan.
