Prawn Jalfrezi

Ingredients

For the Shrimp Marinade:

  • 1 lb shrimp, cleaned and deveined
  • 1/2 tsp turmeric powder
  • 1/2 tsp salt
  • 1 tsp lemon juice

For the Curry:

  • 1 large onion, finely chopped
  • 2 medium tomatoes, chopped or blended
  • 1 green bell pepper, cut into chunks
  • 1/2 red bell pepper, cut into chunks
  • 1/2 yellow bell pepper, cut into chunks
  • 2 green chilies, sliced (adjust to your spice level)
  • 3 garlic cloves, minced
  • 1-inch piece of fresh ginger, minced

Spices:

  • 1 tsp cumin seeds
  • 1 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp coriander powder
  • 1 tsp garam masala
  • 1/2 tsp ground cumin
  • 1/2 tsp fenugreek leaves (optional)
  • Salt to taste

Other Ingredients:

  • 2 tbsp oil (vegetable or mustard oil preferred)
  • Fresh cilantro for garnish

Instructions

  1. Marinate the Shrimp

    • In a bowl, combine the shrimp, turmeric powder, salt, and lemon juice. Toss well to coat. Let the shrimp marinate for 10-15 minutes while you prepare the other ingredients.
  2. Cook the Vegetables

    • Heat 1 tbsp of oil in a large pan over medium heat.
    • Add the chopped onion and cook until golden brown, about 7-8 minutes.
    • Stir in the garlic and ginger, cooking for 1-2 minutes until fragrant.
  3. Add the Bell Peppers and Green Chilies

    • Toss in the green, red, and yellow bell peppers, along with the green chilies. Stir-fry for 3-4 minutes until the peppers are slightly softened but still crisp.
  4. Build the Curry Base

    • Add the chopped or blended tomatoes and cook for 5-7 minutes, stirring occasionally, until the tomatoes break down and the oil begins to separate from the mixture.
    • Stir in turmeric, red chili powder, coriander powder, ground cumin, and salt. Let the spices toast for 1-2 minutes to enhance their flavor.
  5. Cook the Shrimp

    • Add the marinated shrimp to the pan and stir well to coat them in the curry base. Cook for 4-5 minutes, stirring occasionally, until the shrimp are pink and cooked through.
  6. Finish with Garam Masala

    • Sprinkle in the garam masala and fenugreek leaves (if using). Mix well and cook for another 1 minute.
  7. Garnish and Serve
